We are thrilled to invite you to our Spring Wedding Open Day 2018. As the saying goes, we are starting wedding season with a spring clean, fresh ideas for such a busy summer ahead. Come along and see if you can spot our new pieces from our sister company Pip & Co. We also have beautiful new carpets to show you, we are still debating on whether its too cheeky to ask everyone to take their shoes off at the door haha, just kidding!
We are hoping to make this Open Day totally different from any other. We are going to debut our brand new style of tables in our Wedding Breakfast room. We don’t want to give too much away but VAAS have created this digital image to show what we are hoping to achieve. With no doubt a few tweaks being required, we have our fingers crossed our vision comes to life and we are able to make this style available to all of our brides and grooms.

As we step into step into spring I’m really excited about working with all of the seasonal and fresh produce. I’m sure we can all agree that we have had a rough start to the year with the weather, this has given me time to work alongside our great local suppliers to ensure that our menus are flourished for summer.
The wedding open days allow me to experiment with our menu’s. As always, I create a unique bite sized version of one of our main courses to allow our couples to taste a miniature example of what we have to offer. This alongside dishes from our canapé menu are always a pleasure to do, especially enhancing them seasonally as the year progresses. The only downside to offering the main course canapés is this always prompts our couples to change their main menu choices at every wedding open day attended. Our couples tend to choose the ‘safe option’ in their first wedding meeting and then after our November Wedding Open Day where we served our ‘A taste of Nottinghamshire Lamb with hot pot potato and minted shallot jam’ main course canapés, we had a lot more couples allowing their taste buds and hearts to decide rather than their heads.
I am really excited to announce that for our Spring Wedding Open Day we will be serving bitesize versions of our ‘Glazed beef short rib with creamed potato, pea puree and crispy shallot rings’ from our main menu. This menu choice is not only a favourite of our wedding planning team, it also highlights the new season spring pea, creating such a comforting yet vibrant spring dish for your wedding guests. Accompanying that we will also have; ‘Chilli crab croquette with bravas sauce’, ‘Fresh local asparagus spear and camembert wrapped in Parma ham with a hollandaise dip’, ‘Sticky pressed pork with bourbon smoked BBQ glaze and apple slaw’ and ‘Spiced spinach and halloumi naan bread finished with a minted raita’.
I have also decided to create a miniature version of our ‘Trio of Salmon, hot smoked, poached and cured with baby herb and caper salad’ from our starter menu. This dish is garnished with lemon citrus Yuzu pearls which really brightens up the plate and heightens the spring feel.
Alongside our savoury canapés I will be serving our signature salted caramel brownie and sticky toffee pudding as always, but I am looking forward to serving our Warm Bakewell Tart with cherry brandy compote and honey clotted cream.
